- Preheat your oven to 350°F (175°C).
- In a small bowl, combine honey, vanilla bean seeds, cinnamon, cloves, nutmeg, and sea salt. Whisk together until smooth.
- Slice the peaches in half and remove the pits. Place halves cut side up in a baking dish.
- Drizzle the honey and spice mixture evenly over the peach halves.
- Bake the peaches for 25–30 minutes until soft and golden.
- Remove from oven and let sit for a minute. Serve warm, optionally topped with Greek yogurt or coconut cream.
