- Prepare Sugar Syrup: In a medium pot, combine 200 grams of granulated sugar, 500 ml of water, 2 tablespoons of lemon juice, 4 cardamom pods, and a pinch of saffron. Boil, then simmer for 10-15 minutes until thickened. Cool.
- Make Kunafa Nests: Preheat oven to 350°F (175°C). Brush a cupcake tray with 100 grams of melted butter. Shape 200 grams of kunafa dough into small bowls in each cavity. Bake for 15-20 minutes until golden and crispy. Cool.
- Prepare Gulab Jamuns: While nests cool, form balls from 250 grams of gulab jamun mix (1-2 cm). Heat oil and fry until golden brown (4-5 minutes). Soak in cooled syrup for at least 15 minutes.
- Assemble: Spoon 150 grams of fresh cream into each nest. Place one or two gulab jamuns on top. Garnish with 50 grams of chopped pistachios and drizzle with reserved syrup before serving.
