  • 8 ounces Mushrooms Freshly sliced
  • 2 cloves Garlic Minced
  • 0.5 teaspoon Thyme leaves Fresh
  • 2 cups Baby spinach Steamed and squeezed dry
  • 1 cup Mozzarella cheese Sliced

  • 1 tablespoon Olive oil For searing

Method
 

Preparation Steps
  1. Preheat your oven to 390°F (200°C). Cut a pocket into each chicken breast for stuffing.
  2. Season the chicken with salt and pepper inside and out.
  3. In a skillet, melt butter over high heat and sauté mushrooms for about 3 minutes.
  4. Add garlic, thyme, and remaining salt and pepper. Cook for 2 minutes, then add spinach.
  5. Stuff the chicken breasts with the mushroom mixture and mozzarella.
  6. Secure the openings with toothpicks.
  7. Sear the chicken in a skillet with olive oil for about 1½ minutes on each side.
  8. Bake in the oven for about 15 minutes or until the internal temperature reaches 149°F (65°C).
  9. Let the chicken rest for 5 minutes before slicing and serving.
