Preparation Steps
- Preheat your oven to 390°F (200°C). Cut a pocket into each chicken breast for stuffing.
- Season the chicken with salt and pepper inside and out.
- In a skillet, melt butter over high heat and sauté mushrooms for about 3 minutes.
- Add garlic, thyme, and remaining salt and pepper. Cook for 2 minutes, then add spinach.
- Stuff the chicken breasts with the mushroom mixture and mozzarella.
- Secure the openings with toothpicks.
- Sear the chicken in a skillet with olive oil for about 1½ minutes on each side.
- Bake in the oven for about 15 minutes or until the internal temperature reaches 149°F (65°C).
- Let the chicken rest for 5 minutes before slicing and serving.
