  • 3 cups Water
  • 6 tablespoons Unsalted Butter cut into pieces
  • 0.5 cups Fresh Lemon Juice from about 3-4 lemons
  • 1 tablespoons Lemon Zest
For the Topping
  • 1.5 cups All-Purpose Flour
  • 1.5 teaspoons Baking Powder
  • 0.25 teaspoons Salt
  • 0.75 cups Granulated Sugar
  • 6 tablespoons Cold Unsalted Butter cut into cubes
  • 0.75 cups Whole Milk
  • 2 tablespoons Granulated Sugar for Sprinkling sprinkled on top before baking

Method
 

Step 1: Prepare the Lemon Filling
  1. In a medium saucepan, combine 1 ½ cups granulated sugar, ¼ cup all-purpose flour, and ¼ teaspoon salt, whisking until blended. Gradually add 3 cups of water while whisking to achieve a smooth mixture. Place the pan over medium heat, stirring constantly, and bring it to a gentle simmer.
Step 2: Thicken the Filling
  1. Once simmering, reduce the heat to low and allow the mixture to simmer for another 5-7 minutes. Stir in ½ cup fresh lemon juice and 1 tablespoon lemon zest.
Step 3: Preheat the Oven
  1. Preheat your oven to 375°F (190°C).
Step 4: Make the Topping Dry Ingredients
  1. In a large mixing bowl, whisk together 1 ½ cups all-purpose flour, 1 ½ teaspoons baking powder, and ¼ teaspoon salt. Add ¾ cup granulated sugar and mix it in.
Step 5: Incorporate the Cold Butter
  1. Cut in 6 tablespoons of cold unsalted butter until the mixture resembles coarse crumbs.
Step 6: Add the Milk
  1. Gradually pour in ¾ cup of whole milk, stirring gently until just combined.
Step 7: Pour the Lemon Filling
  1. Take your prepared lemon filling and pour it evenly into a 9x13 inch baking dish.
Step 8: Add the Cobbler Topping
  1. Using a spoon, drop spoonfuls of the cobbler topping evenly over the lemon filling. Sprinkle 2 tablespoons of granulated sugar over the topping.
