  • 2 eggs room temperature
  • 2.75 cups all-purpose flour can be substituted with gluten-free flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt fine salt recommended
  • 1 teaspoon cream of tartar recommended for best texture
  • 2 cups Fruity Pebbles cereal or any similar crispy cereal
For the Decoration
  • 1 cup white chocolate chips can use dark chocolate for a richer flavor

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3–4 minutes.
  2. Add in the room temperature eggs, mixing until fully combined, then set aside.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cream of tartar. Fold in the Fruity Pebbles.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in additional Fruity Pebbles and white chocolate chips.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  6. Scoop tablespoon-sized portions of dough onto lined baking sheets, arranging them 2 inches apart. Bake for 10-12 minutes.
  7. Cool the cookies on the baking sheet for about 5 minutes before transferring to a wire rack.
  8. Melt the white chocolate chips in a microwave-safe bowl. Once cookies are completely cool, dip the tops in melted chocolate.
