Baking Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly spraying it with floured cooking spray.
- In a large mixing bowl, whisk together the egg, brown sugar, canola oil, granulated sugar, sour cream, and peanut butter until smooth and creamy for 2-3 minutes.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gently fold them into the wet mixture until just combined.
- Fold in the mashed ripe bananas and grated apples gently until just combined.
- Pour the batter into the greased loaf pan, smoothing the top. Ensure the mixture fills about ¾ of the pan.
- Bake in preheated oven for 60 to 65 minutes, checking for doneness with a toothpick.
- Remove from the oven and cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
