- Preheat your oven to 425°F (220°C).
- Whisk together the all-purpose flour, sugar, salt, and baking powder until well combined.
- In a separate bowl, mix the milk and white vinegar, then whisk in the vanilla extract, eggs, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined.
- Grease two mini muffin pans and fill each muffin cup about two-thirds full with the batter.
- Bake for 9-12 minutes until golden brown and a toothpick comes out clean.
- Prepare the icing by mixing cream cheese, confectioners sugar, maple syrup, and a pinch of salt until smooth.
- Once cooled, dip the pancake bites in the icing and sprinkle chopped bacon over each.
