  • ½ cup unsalted butter softened
  • 3 large eggs
  • 1 cup full-cream whole milk
  • ¼ cup vegetable oil
  • ½ cup Greek yogurt or sour cream
  • 2 teaspoon vanilla extract or vanilla bean paste
  • 1 teaspoon pink food gel
  • 1 teaspoon red food gel
  • 1 teaspoon strawberry flavoring
  • 1 teaspoon yellow food gel
  • 1 teaspoon mango flavoring
  • 2 teaspoon optional tequila
  • 3 cups American buttercream frosting or Swiss meringue buttercream
  • ½ cup granulated sugar
  • 40 limes cut into wedges
  • 1 cup strawberries washed & halved

  1. Preheat the Oven: Begin by preheating your oven to 140°C (275°F) for fan-forced or 160°C (320°F) for conventional baking. Line your cupcake tins with liners to prepare for the batter.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the plain all-purpose flour, caster sugar, baking powder, and fine salt. Whisk these together using a hand mixer until thoroughly blended.
  3. Combine with Butter: Add softened unsalted butter to the dry mix and blend until the mixture resembles a crumbly texture, ensuring it clumps together nicely for a rich flavor.
  4. Incorporate Wet Ingredients: Add in the large eggs, full-cream whole milk, vegetable oil, Greek yogurt, vanilla extract, and optional tequila. Mix until your dry ingredients are fully incorporated, then blend for an additional 20 seconds until smooth.
