Ingredients

  • ½ cup Lemon Juice
  • 2 tablespoons Lemon Zest
  • 2 cups Blueberries
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 cup Butter
  • 1 ½ cups Sugar
  • 4 Eggs
  • 1 cup Milk
  • 8 ounces Cream Cheese
  • ½ cup Butter
  • 4 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • Fresh Blueberries for decorating
  • Lemon Zest for garnishing
  • Parchment Paper Rounds

Method

  1. Prepare Cake Pans: Start by lining your 8-inch round cake pans with parchment paper rounds. First, grease the pan, place the parchment round inside, and grease the parchment as well.
  2. Make Batter: In a mixing bowl, combine softened butter and sugar, then beat until fluffy. Add eggs one at a time, followed by the lemon juice, zest, and milk. Gradually mix in the flour and baking powder until just combined.
  3. Add Blueberries: Toss the blueberries in a little flour to ensure they don’t sink. Gently fold them into your cake batter.
  4. Bake Cakes: Preheat your oven to 350°F (175°C). Pour the batter evenly into the prepared pans and bake for about 25-30 minutes or until golden brown.
  5. Cool Cakes: Allow the cakes to cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
  6. Trim and Level Cakes: Once cooled, use a cake leveler or a serrated knife to trim the tops of the cakes.
  7. Frost Cake: Spread cream cheese frosting between the layers and around the exterior of the cake. Decorate with fresh blueberries, lemon zest, and lemon slices.
