Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Peel, core, and chop 2 cups of fresh apples into bite-sized pieces and mix with 2 tablespoons of brown sugar and 1 teaspoon of cinnamon.
  3. In a bowl, whisk together 2 cups of flour, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, 0.5 teaspoon of nutmeg, and 0.5 teaspoon of salt.
  4. In another bowl, whisk together 2 eggs, 0.5 cup of granulated sugar, 0.5 cup of packed brown sugar, 1 tablespoon of vanilla extract, 1 cup of sourdough discard, and 0.5 cup of milk.
  5. Pour the wet mixture into the dry ingredients and stir until just combined, then fold in the apples.
  6. Pour the batter into a greased loaf pan and bake for 55 to 60 minutes.
  7. Prepare the glaze by mixing 0.5 cup of powdered sugar, 2 tablespoons of melted butter, and 1 tablespoon of milk.
  8. Let the bread cool for 10-15 minutes, then drizzle the glaze over the top.
