- In a large mixing bowl, combine chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Stir gently until creamy.
- Line a baking sheet with parchment paper. Scoop about 2 tablespoons of the yogurt mixture onto the sheet to form clusters.
- Place the baking sheet in the freezer for about 1 to 2 hours until solid.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat until smooth, about 1-2 minutes.
- Dip each frozen cluster into the melted chocolate, then place back on parchment paper.
