Instructions

  3. Add brown sugar to the mixture and mix until glossy and fluffy.
  4. Lower mixer speed, add egg, and mix until fully incorporated.
  5. Mix in vanilla extract until well combined.
  6. Gradually combine dry ingredients with wet mixture until just incorporated.
  7. Cover dough and refrigerate for 30 minutes.
  8. Scoop dough, flatten slightly, and place a mini peanut butter cup in the center. Form into a ball.
  9. Roll in granulated sugar and dust with powdered sugar.
  10. Bake in preheated oven for 8-10 minutes until tops crackle.
  11. Let cookies rest on baking sheet for 2-3 minutes before transferring to a cooling rack.
