Method
 

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 13x9 inch baking pan with parchment paper or foil and lightly grease it.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, unsweetened cocoa powder, salt, baking powder, and baking soda.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, followed by the vanilla extract and red food coloring, mixing until smooth.
  5. Gradually incorporate the dry ingredient mixture into the wet ingredients, mixing just until combined.
  6. Spread the batter evenly in the prepared baking pan.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Allow to cool completely in the pan on a wire rack.
  9. Prepare the cream cheese frosting by beating together the softened cream cheese and butter until creamy.
  10. Gradually add powdered sugar, then mix in vanilla extract for additional flavor.
  11. Once the cookie bars are cool, frost the top generously with cream cheese frosting and cut into squares.
