Method
 

Instructions
  1. Start by brewing two cups of strong espresso or coffee, allowing it to cool to room temperature.
  2. In a large mixing bowl, combine mascarpone cheese, granulated sugar, brown sugar, and kosher salt.
  3. Add pumpkin pie spice and beat the mixture with an electric mixer until smooth and creamy.
  4. Slowly add pumpkin puree to the mascarpone mixture and blend thoroughly.
  5. In a separate bowl, whip heavy cream until soft peaks form.
  6. Gently fold the whipped cream into the pumpkin mixture until well combined.
  7. Quickly dip each ladyfinger into the cooled espresso for 1 to 2 seconds and arrange in a 13x9 inch dish.
  8. Spread half of the creamy pumpkin mixture over the ladyfingers.
  9. Add another layer of dipped ladyfingers on top of the pumpkin mixture, then spread the remaining mascarpone cream.
  10. Chill the tiramisu for at least four hours, or overnight for the best flavor.
  11. Before serving, dust with cocoa powder.
