- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice each mini croissant horizontally, about three-quarters of the way through, to create a pocket.
- Fill each croissant pocket with about 1 tablespoon of cookie dough evenly.
- Sprinkle chopped pecans over the cookie dough in each croissant and lightly press down.
- Arrange the filled croissants on the baking sheet with space in between.
- Bake for 10 to 12 minutes or until golden brown.
- Allow to cool on the baking sheet for a few minutes before drizzling with caramel sauce.
