Cream the eggs and sugar together for 3-4 minutes until light and fluffy. Fold in the mashed bananas and vanilla extract.
Gradually combine the dry mixture with the wet ingredients, stirring gently until just combined.
Pour the batter onto the prepared baking sheet and bake for 25-30 minutes until a toothpick comes out clean.
In a clean kitchen towel, invert the cake and roll it up from one short end to another. Allow it to cool completely in this rolled form for 30 minutes.
To make the frosting, beat together the cream cheese, butter, powdered sugar, and banana extract until smooth.
Once the cake is cooled, unroll it and spread an even layer of frosting. Reroll the cake without the towel.
Dust the rolled cake with powdered sugar before serving.
