Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a 9x13 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine ½ cup of room-temperature butter, 1 cup of brown sugar, and 1 cup of creamy peanut butter. Beat until creamy.
  3. Add 2 large eggs and 1 tablespoon of vanilla extract to the mixture and continue mixing until smooth.
  4. Gradually add 1 ½ cups of all-purpose flour, 2 cups of oats, 1 teaspoon of baking soda, and 1 teaspoon of salt until just combined.
  5. Spread the batter evenly in the prepared baking pan, pressing down gently.
  6. Bake for 18-22 minutes until the center is set but still slightly soft.
  7. Remove the pan and let the bars cool slightly. Spread 1 ½ cups of creamy peanut butter on top.
  8. In a separate bowl, whisk together 2 cups of powdered sugar, 2 tablespoons of cocoa powder, and 3 tablespoons of water until smooth. Adjust thickness as needed.
  9. Fold in 2 ounces of melted chocolate and spread icing over the bars.
