Preparation
  1. Preheat your oven to 325°F (163°C) and prepare a 9-inch springform pan by greasing it and wrapping the base in foil.
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Press into the pan and bake for 8-10 minutes.
  3. Toss together peeled diced apples, brown sugar, cinnamon, flour, and lemon juice for the apple filling and set aside.
  4. Beat softened cream cheese and granulated sugar until smooth. Add eggs, one at a time, then stir in vanilla, sour cream, cinnamon, and nutmeg.
  5. Pour the cheesecake filling over the cooled crust, then spoon the apple mixture on top.
  6. Mix old-fashioned oats, flour, brown sugar, and cinnamon, then cut in cubed butter until crumbly. Sprinkle over the apple layer.
  7. Place the pan in a water bath and bake for 60-70 minutes, until the center jiggles slightly.
  8. Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
