Preparation
- Preheat your oven to 325°F (163°C) and prepare a 9-inch springform pan by greasing it and wrapping the base in foil.
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Press into the pan and bake for 8-10 minutes.
- Toss together peeled diced apples, brown sugar, cinnamon, flour, and lemon juice for the apple filling and set aside.
- Beat softened cream cheese and granulated sugar until smooth. Add eggs, one at a time, then stir in vanilla, sour cream, cinnamon, and nutmeg.
- Pour the cheesecake filling over the cooled crust, then spoon the apple mixture on top.
- Mix old-fashioned oats, flour, brown sugar, and cinnamon, then cut in cubed butter until crumbly. Sprinkle over the apple layer.
- Place the pan in a water bath and bake for 60-70 minutes, until the center jiggles slightly.
- Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
