Cupcake Instructions
  1. Preheat your oven to 350°F (175°C) and line your cupcake pans with paper liners.
  2. In a medium mixing bowl, whisk together the cake flour, baking powder, baking soda, and salt for about 30 seconds.
  3. In a separate bowl, combine the buttermilk, vegetable oil, fresh lime juice, and lime zest. Stir gently to mix.
  4. Using a stand mixer, beat the softened butter until smooth. Gradually add the sugar and lime gelatin powder, mixing until fluffy.
  5. With the mixer on low, add the eggs one at a time, allowing each to fully incorporate.
  6. Gradually add the dry and wet mixtures to the stand mixer, beginning and ending with the dry ingredients.
  7. Fill each cupcake liner with about ¼ cup of batter.
  8. Bake for 15-18 minutes, or until a toothpick comes out clean. Let cool completely.
  9. In a mixing bowl, beat the softened butter until smooth, then mix in the cream cheese, tequila, and lime zest.
  10. Gradually incorporate powdered sugar until the frosting is creamy and smooth.
  11. Once the cupcakes are cool, frost them generously. Chill the frosting for easier piping if desired.
