Cupcake Instructions
- Preheat your oven to 350°F (175°C) and line your cupcake pans with paper liners.
- In a medium mixing bowl, whisk together the cake flour, baking powder, baking soda, and salt for about 30 seconds.
- In a separate bowl, combine the buttermilk, vegetable oil, fresh lime juice, and lime zest. Stir gently to mix.
- Using a stand mixer, beat the softened butter until smooth. Gradually add the sugar and lime gelatin powder, mixing until fluffy.
- With the mixer on low, add the eggs one at a time, allowing each to fully incorporate.
- Gradually add the dry and wet mixtures to the stand mixer, beginning and ending with the dry ingredients.
- Fill each cupcake liner with about ¼ cup of batter.
- Bake for 15-18 minutes, or until a toothpick comes out clean. Let cool completely.
- In a mixing bowl, beat the softened butter until smooth, then mix in the cream cheese, tequila, and lime zest.
- Gradually incorporate powdered sugar until the frosting is creamy and smooth.
- Once the cupcakes are cool, frost them generously. Chill the frosting for easier piping if desired.
