Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, melted butter, and salt until crumbly.
- Press the mixture into the bottom of the springform pan and bake for 10 minutes. Let cool.
- In a new bowl, beat cream cheese and powdered erythritol until smooth.
- Mix in vanilla extract until well combined.
- Whip the heavy cream until soft peaks form and fold into cream cheese mixture.
- Stir in brewed coffee and optional instant coffee until combined.
- Pour the filling into the crust and smooth the top.
- Cover with plastic wrap and chill for at least 4 hours.
