  • ½ cup brewed coffee cooled
  • 1 tablespoon instant coffee optional for stronger flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, melted butter, and salt until crumbly.
  3. Press the mixture into the bottom of the springform pan and bake for 10 minutes. Let cool.
  4. In a new bowl, beat cream cheese and powdered erythritol until smooth.
  5. Mix in vanilla extract until well combined.
  6. Whip the heavy cream until soft peaks form and fold into cream cheese mixture.
  7. Stir in brewed coffee and optional instant coffee until combined.
  8. Pour the filling into the crust and smooth the top.
  9. Cover with plastic wrap and chill for at least 4 hours.
