Prepare the Crust
- Combine 2 cups of graham cracker crumbs with 0.5 cup of melted butter until resembling wet sand. Firmly press into the bottom of a springform pan and refrigerate for 10 minutes.
Create the Chocolate Layer
- Heat 1 cup of chocolate chips and 0.5 cup of heavy cream in a microwave-safe bowl in 20-second intervals until smooth. Pour over the chilled crust.
Mix the Cheesecake Filling
- Beat together 2 cups of softened cream cheese, 0.5 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth. Gently fold in 1 cup of whipped cream.
Assemble the Cheesecake
- Spoon the cheesecake filling over the chocolate layer and spread evenly. Drizzle 1 cup of caramel sauce over the filling.
Optional Chocolate Drizzle
- Melt 0.25 cup of chocolate chips with 1 tablespoon of heavy cream in a microwave-safe bowl and drizzle over the caramel layer.
Chill Before Serving
- Cover and chill for at least 4 hours or overnight until fully set. Remove from the pan and slice to serve.
