Ingredients
  

For the Salsa
  • 16 ounces strawberries hulled and finely diced
  • 1 medium apple peeled, cored, and finely diced
  • 3 kiwis peeled and finely diced
  • 1 ripe mango peeled and finely diced
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
For the Pita Chips
  • 3 6-inch pita breads white or whole wheat
  • 2 tablespoons unsalted butter melted
  • 1.5 tablespoons granulated sugar
  • 0.75 teaspoon ground cinnamon

Method
 

Preparation
  1. In a large bowl, combine the strawberries, medium apple, kiwis, and mango. Mix gently to combine.
  2. In a small bowl, whisk together honey, lemon juice, and lemon zest until smooth.
  3. Pour the honey-lemon mixture over the fruit and gently toss to coat.
  4. Cover and refrigerate for at least 15 minutes.
  5. Preheat your oven to 375°F (200°C) and line a baking sheet with parchment paper.
  6. Slice each pita bread into 8 wedges and separate the layers.
  7. Arrange the pita wedges on the baking sheet and brush with melted butter.
  8. Combine granulated sugar and ground cinnamon, then sprinkle over the buttered wedges.
  9. Bake for 8-10 minutes until golden brown.
  10. Allow the chips to cool completely before serving.
  11. Serve the chilled fruit salsa alongside the pita chips.
