- Preheat your oven to 350ºF (175ºC) and grease an 8×8-inch baking dish with butter or cooking spray.
- In a large mixing bowl, whisk together 3 large eggs, 1 ½ cups of whole milk, 1 cup of white sugar, and a splash of vanilla extract until smooth.
- Gradually add in 1 ½ cups of sweet glutinous rice flour, ½ cup of cocoa powder, ½ teaspoon of baking powder, 1 teaspoon of granulated instant espresso powder, and ¼ teaspoon of salt to the wet mixture.
- Once smooth, fold in ½ cup of dark chocolate chips until evenly distributed.
- Pour the batter into the prepared baking dish and spread it evenly. Bake for about 40 minutes.
- Allow to cool in the pan for 5 minutes before cutting into squares.
- Garnish with flaky sea salt, powdered sugar, or melted chocolate as desired before serving.
