Start by heating vegetable oil in a large, deep skillet or pot over medium-high heat. You want the oil to reach about 350°F for optimal frying.
In a shallow dish, combine white sugar and ground cinnamon, mixing them well.
Once the oil is at the perfect temperature, carefully add one flour tortilla at a time, frying for about 2-3 minutes.
After frying, use a slotted spoon to remove the buñuelos from the oil, letting the excess oil drip back into the pan.
Immediately dredge each fried tortilla in the cinnamon-sugar mixture or sprinkle it generously on top while it’s still warm.
